A busy lifestyle, as well as an increase in purchasing power, lead to an increase in the market for ready-made products, both semi-finished products and ready-to-eat dishes. Ready-to-eat foods are considered an alternative to homemade food. The global market of finished products from fish and non-volatile water bodies has positive dynamics with an average annual growth rate of about 0.98 billion US dollars. Russia has a high potential both in general for fish and seafood, and in the production and sale of finished products from them. The key aspect of increasing the share of finished products from aquatic biological resources should be the development of the Russian fisheries complex in terms of deep processing, which will increase the volume of production of finished products.
An experiment was conducted on the enrichment of white chocolate with a pigment-protein complex of cyanobacteria Arthrospira platensis — phycocyanin. Phycocyanin can be successfully used in the treatment and prevention of a number of diseases, such as heart, kidney, lung, neurological and oncological diseases, inflammation, cataracts and liver diseases. In this regard, the development of food products enriched with phycocyanin is an urgent direction for the development of a range of functional products. The dynamics of accumulation of spirulina biomass during its cultivation in laboratory conditions on Zarruk nutrient medium was determined, for which the spectrophotometric method was used. An enriching component, phycocyanin-containing paste (FSP) of blue color with a protein content of 98.3% in terms of dry matter, was obtained. The optimal amount of added FSP was found to be 2.1 g per 100 g of finished chocolate. Data on the general chemical composition of fortified chocolate are presented.
The analysis of literary sources is carried out, the assessment of the feed value and feed qualities of feeds and components of compound feeds from the waste of the fishing industry for agricultural animals is given: fish, krill, crab meal and fish oil. It is concluded that the non-food products presented are important components of fish feed and compound feed due to their nutritional and biological value. This shows the prospect of their expedient use and an increase in their production from recycled materials in the territory of the Russian Federation with the support of the state in the current situation.
